Gardens are beginning to offer a bounty and there are several you can check out planted in partnership between community members, Niagara Beautification Commission and Grassroots Gardens.
It’s worth noting as well, some have bountiful supplies of purslane and lambs quarters, plants regarded by many as weeds.
Euell Gibbons suggested lambs quarters be renamed “wild spinach” because it is so bountiful, tasty and nutritious. Sorry I didn't have a photo today of lambs quarters. Maybe tomorrow.
Purslane, which clings low to the ground and looks like portulaca or a succulent, is growing with abundance at the garden adjacent to the Salvation Army on Buffalo Avenue.
It is eaten as a vegetable in most countries and is said to have more omega-3 fatty acid than salmon
